Beef de Roma

I love this recipe because it’s so quick & easy, but tastes like I spent all day in the kitchen!

1 lb. ground beef

1/2 c. onion, chopped

1/4 c. green pepper, chopped

1 clove garlic, minced

1 t. salt

1 t. dried parsley

1/2 t. dried oregano

1/2 t. dried basil

1/4 t. pepper

2 8-oz. cans tomato sauce

3 c. prepared rice

16-oz. container cottage cheese

Garnish: grated Parmesan cheese

Brown meat in a skillet; drain. Add onion, pepper, garlic, seasonings and tomato sauce; simmer 5 minutes. Layer rice, cottage cheese and meat mixture in a greased 3-quart casserole dish. Bake at 350 degrees for 30 minutes. Sprinkle with Parmesan cheese and bake 10 minutes or until golden. Serves 4 to 6.

As soon as a baking dish is empty, submerge it in hot, soapy water to speed clean-up...saves oodles of scrubbing time!
