A side of refried beans or Spanish rice will complete this dinner nicely.
1 lb. ground beef
1/2 c. onion, chopped
1/2 c. green pepper, chopped
1-1/2 c. frozen corn, thawed and drained
1 c. chunky salsa
3/4 c. shredded Cheddar cheese
1/8 t. pepper
1 c. corn chips, crushed
Brown meat, onion and pepper in a skillet; drain. Add corn, salsa, Cheddar cheese and pepper. Spray a 10" pie plate with non-stick vegetable spray. Place meat mixture in pie plate; top with crushed chips. Bake at 350 degrees for 30 minutes. Let cool for 10 minutes. Serves 6 to 8.
Stir up some simple artichoke salsa to spoon over casserole dishes! Drain and finely chop one, 6-ounce jar of marinated artichoke hearts and blend with one finely chopped chile pepper, one minced garlic clove and the juice of one lime. Delicious!
