Bakes in only 25 minutes, this can be baking away while the salad and side dishes are being prepared.
1-1/2 lbs. ground beef
14-1/2 oz. can diced tomatoes
1 t. salt
1 T. sugar
1-1/2 c. sour cream
3-oz. pkg. cream cheese, softened
1/4 c. onion, chopped
8-oz. pkg. medium egg noodles, cooked
1 c. shredded Cheddar cheese
Brown beef in a large skillet over medium heat; drain. Add tomatoes, salt and sugar; reduce to low heat and simmer for 15 minutes. Set aside. Combine sour cream, cream cheese and onion in a bowl; mix well and set aside. Place half the noodles in a lightly greased 13"x9" baking pan; top with meat mixture, then sour cream mixture. Layer remaining noodles over top; sprinkle with cheese. Bake at 350 degrees for 25 minutes. Serves 6.
Don’t store tomatoes in the refrigerator, they’ll quickly lose their “just-picked” taste. Keep them on a pantry shelf instead.
