1 lb. ground beef
6 slices bacon, diced
1 onion, chopped
1 green pepper, chopped
1 T. white vinegar
1 T. mustard
1/2 c. catsup
1/2 c. brown sugar, packed
15-oz. can kidney beans, drained and rinsed
16-oz. can chili beans
15-oz. can pork & beans
6 slices American cheese
1 c. tortilla chips, crushed
Brown ground beef, bacon, onion and pepper in a large skillet over medium-high heat; drain. Pour into an ungreased 3-quart casserole dish. Add vinegar, mustard, catsup, brown sugar and beans; mix to blend. Bake at 375 degrees for 45 to 50 minutes; remove from oven and top with cheese and chips. Bake an additional 5 to 10 minutes, until cheese is melted and bubbly. Serves 6.
To easily separate bacon slices, roll the package of bacon lengthwise and secure with a rubber band before refrigerating. When the package is unrolled, it’s so easy to separate each slice!
