I’ve even prepared this over a campfire...every bit as delicious!
5 slices bacon, cut into 1/2-inch pieces
2 lbs. boneless beef chuck, cut into 1-inch cubes
2 onions, sliced
2 cloves garlic, minced
3/4 c. regular or non-alcoholic beer
12-oz. jar beef gravy
1 c. baby carrots
1/2 t. dried thyme
Garnish: fresh parsley, chopped
Cook and stir bacon until crisp over medium heat in a Dutch oven. Remove bacon with a slotted spoon; set aside. Add beef to drippings; cook over medium-high heat until browned, stirring occasionally. Add onions and garlic; cook and stir for one minute. Remove from heat; stir in remaining ingredients except parsley. Cover and bake at 350 degrees for 45 minutes. Uncover and bake an additional 45 minutes. Sprinkle servings with parsley and reserved bacon. Serves 4 to 6.
