Oniony Zucchini Bake

When the zucchini is bursting in my garden, this is the recipe I turn to. It just can’t be beat for taste.

3 c. zucchini, thinly sliced

4 eggs, beaten

1 c. biscuit baking mix

1/2 c. oil

1/2 c. onion, chopped

1/2 c. grated Parmesan cheese

2 T. fresh parsley, chopped

1/2 t. seasoned salt

1/2 t. dried oregano

1/2 t. salt

1/4 t. pepper

Mix all ingredients together. Pour into a greased 13"x9" baking pan. Bake at 350 degrees for 30 minutes. Serves 6 to 8.

What can you serve with casseroles? Crisp salads, grilled vegetables, buttered new potatoes or fresh fruit salads are all perfect pairings!
