Mary’s Broccoli & Rice

Sprinkle with shredded Cheddar to make it extra cheesy.

1/2 onion, chopped

1/2 c. plus 1 T. butter, melted and divided

15-oz. jar pasteurized processed cheese sauce

10-oz. pkg. frozen broccoli, thawed

10-3/4 oz. can cream of celery soup

1-1/2 c. instant rice, uncooked

1/2 c. milk

1/2 c. cracker crumbs

Sauté onion in 1/2 cup butter. Add cheese sauce, broccoli, soup, rice and milk; place in a greased 11"x7" baking pan. Set aside. Combine cracker crumbs and remaining butter; stir to coat and sprinkle over casserole. Bake at 350 degrees for 50 minutes to one hour. Serves 4 to 6.

Serve up homemade lemonade for a refreshing change...it couldn’t be simpler! In a large saucepan, combine 2 quarts water and 1/2 cup sugar. Heat just until the sugar dissolves. Remove from heat and pour in 3/4 cup lemon juice. Mix well and chill.
