Mom was such a good cook, she could take nothing and turn it into something delicious! She was a truly wonderful lady.
2 c. cauliflower flowerets
1 c. carrots, peeled and sliced
24-oz. pkg. frozen broccoli, thawed and drained
1/2 c. margarine, melted
10-3/4 oz. can cream of mushroom soup
1 c. mayonnaise
1 c. shredded sharp Cheddar cheese
1/2 c. onion, chopped
1 c. buttery round crackers, crushed
Bring a large pot of water to a rapid boil; add cauliflower, carrots and broccoli. Boil only until vegetables are crisp-tender. Drain and set aside. Pour margarine into a 2-quart casserole dish; add vegetables and set aside. In a separate bowl, mix together soup, mayonnaise, cheese and onion. Spread mixture over vegetables. Top with crushed crackers. Bake at 350 degrees for 30 to 40 minutes. Serves 8.
