Soup is a smart way to up your veggie intake without having to overthink things. I cook soup in big batches and freeze it in individual portions so that I’m never stuck for a nutritious lunch or light dinner. This soup helps to combat inflammation, so it’s a great one to eat if you’re training hard. Make this soup and you will definitely get your greens!

Melt the butter in a large pan over a low heat. Add the onion and leeks and cook for 5 minutes, until softened. Add the broccoli and kale, stir well and cover. Cook for 5 minutes, stirring occasionally. Add the stock and bring to the boil. Reduce the heat and simmer, covered, for 10 minutes or until the vegetables are tender.

Take the pan off the heat. Purée the soup with a hand blender until smooth. Season to taste and ladle the soup into warmed serving bowls.
