It took me a while to get used to the idea of eating green soups: to me they always looked a bit too . . . well . . . green. But then I discovered that pea soup is actually delicious. This soup is a real ‘souper hero’! The ingredients are inexpensive, it’s tasty, packed full of nutrition and great to cook in a big batch for freezing and reheating. This is delicious by itself and it also goes well with crusty wholemeal bread.
Heat the butter in a large pan over a low heat. Add the onion and mint and cook for about 5 minutes. Stir in the peas and stock and bring to a boil. Simmer, uncovered, for 10 minutes or until the peas are cooked through. Remove from the heat and set aside to cool for a few minutes.
Use a hand blender to blitz the soup. Ladle the soup into warmed serving bowls.
