TUNA PESTO PASTA

This is a real student lunch – in the nicest possible sense! When I was in university, I was constantly going between the lecture hall, the track and the gym. Tuna Pesto Pasta was a lunch staple for me. And it still is nowadays: it always seems to set me up for a busy afternoon of work and running. The ingredients are simple and easy to find, and they combine into a nutritious lunch. The tuna is full of omega-3 goodness and the pasta will boost your energy for the afternoon ahead. This dish is delicious cooked fresh and served hot, but the leftovers are equally tasty as a cold pasta salad. A no-fuss, tasty lunch if ever there was one.

Cook the pasta according to the instructions on the package. Drain the pasta and return it to the pot. Stir in the tuna, pesto and scallions and heat through. Scrape the pasta into a warmed serving bowl. Sprinkle over the Parmesan and serve.
