FIT FOODIE LASAGNE

Lasagne is a dish I regularly have as an indulgence if I’m out for dinner. At home, I make a leaner version: Fit Foodie Lasagne. I use only a little butter and cheese, and I use spelt flour instead of white flour – but it still tastes deliciously rich. Lasagne can be a bit of work but it’s always worth the effort. I often make the Fit Foodie Tomato Sauce in advance, which means that the Fit Foodie Lasagne itself is no work at all. Consider making a double batch of this too. It’s always good to have Fit Foodie Lasagne in your freezer: no matter how busy your week gets, you will still eat well.

FIT FOODIE TOMATO SAUCE

This sauce can be made well in advance and it can be used in stews and casseroles that call for chopped tomatoes. It makes a delicious pasta sauce too.

Heat the oil in a large pan over a medium heat. Add the carrot, celery, onion, pepper and garlic and cook for about 10 minutes, until softened. Add the tomatoes, oregano and 350ml of water and simmer, uncovered, for 20 minutes, stirring occasionally. Remove the pan from the heat. Purée the sauce with a hand blender until smooth. Season to taste. Place the cooled sauce in an airtight container and store in the fridge or freezer.
