TURKEY STIR-FRY

Turkey is not just for Christmas! This recipe is quick to prepare and makes a tasty midweek dinner. It might seem strange to put minced meat into a stir-fry but it actually works really well with turkey because the smaller pieces of meat soak up all of the heat and flavours of chilli, ginger, garlic and soy sauce. This is another recipe where you don’t have to stick rigidly to the ingredients list. Just use it as a guide and don’t be afraid to experiment with the contents of your fridge.

Melt the coconut oil in a large pan over a medium-high heat. Add the onion, chilli, garlic and ginger and stir-fry for about 3 minutes. Add the broccoli, carrot and pepper and stir-fry for another 3 minutes. Add the turkey mince, soy sauce and fish sauce and stir-fry for 8 minutes or until the turkey is cooked through.

Meanwhile, cook the rice according to the instructions on the package.

Spoon the cooked rice into warmed serving bowls. Spoon the stir-fry on top. Before serving, tear the basil leaves and scatter them over the stir-fry.
