MINTY PEAS

When I’m out to dinner, I’ll often order a side of peas – just to see how the chef has spruced things up. This is my idea for livening up your peas and making them a side dish to look forward to. In terms of their nutritional benefits, peas don’t get the credit they deserve. They are small but mighty: packed full of protein, antioxidants and fibre. The humble pea is well deserving of a place on your plate!

Melt the butter in a large pot over a medium heat. Add the frozen peas, mint and a tablespoon of water. Simmer for about 5 minutes, until the peas are heated through, and serve.
