HERBED POTATO WEDGES

Potato wedges make such a versatile side dish – they’re delicious with meat, fish or vegetables. These wedges are great to make pre- or post-workout, if you want to steer clear of junk food and still get a savoury hit.

REGULAR WEDGES

Preheat the oven to 200°C/400°F/gas 6. You will need two large baking trays.

Place the potato wedges, oil and herbs in a large mixing bowl. Use your hands to give each potato wedge a coating of oil and herbs. Spread the potato wedges on the baking trays and roast for about 40 minutes, turning once. Divide the potato wedges between serving bowls and season to taste.
