GIN & HOUSE TONIC

I’m a fan of Hendrick’s Gin, but you can use Bombay Sapphire, Tanqueray – whichever suits your palate. We make our own tonic water at Rockpool, but a great option for home is to get yourself a soda syphon, then you can create soda and tonic to your heart’s desire.
30 ml (1 fl oz) gin
100 ml (3½ fl oz) homemade tonic
lime wedge, to garnish
Simply build this drink in a short glass by pouring the gin over ice and adding tonic to just below the rim. Garnish with the wedge of lime and off you go.
