THYME-ROASTED MUSHROOMS

SERVES 6–8 AS A SIDE DISH

Instead of the baking tray, you could cook the mushrooms in an attractive casserole dish and it can go straight to the table.

1 kg (2 lb 4 oz) large Swiss brown mushrooms

20 g (¾ oz) butter, melted

1½ tablespoons extra virgin olive oil

good pinch of thyme leaves

sea salt and freshly ground black pepper

Preheat the oven to 200°C (400°F/Gas 6).

Place the mushrooms, stems up, on a large baking tray. Brush with the butter and drizzle with the oil. Scatter with the thyme leaves and season with salt and pepper. Roast in the oven for approximately 15 minutes or until tender.

Serve the mushrooms with a green salad with a citrusy dressing, or on toast.
