Sometimes you just crave breakfast all day long. Next time you do, take the same seasonings used to make breakfast sausage so delicious and apply them to some pork chops. This seasoning rub, coupled with the grilled flavor of Kingsford Charcoal Briquets with applewood, makes these chops an anytime meal.
YIELD: 4 SERVINGS • COOK TIME: 10–12 MINUTES
RUB
3¼ tsp (16 g) salt
2¼ tsp (10 g) dark brown sugar
1½ tsp (3 g) black pepper
1 tsp dried sage
¼ tsp garlic powder
¼ tsp cayenne pepper
⅛ tsp ground nutmeg
MEAT
4 (6–8-oz [170–227-g]) bone-in pork chops or boneless loin chops (¾” [2 cm] thick)
To make the rub, in a small bowl, combine all the rub ingredients. Season the chops liberally with the rub.
Configure your charcoal grill for direct cooking and preheat to 450°F (232°C).
To make the meat, place the pork chops on the grill and cook over direct heat for 5 to 6 minutes. Flip the pork chops, and continue to cook for 5 to 6 minutes, or to an internal temperature of 145 to 150°F (63 to 66°C). Remove the chops from the grill and let them rest for 5 minutes before serving.
