2 (4-lb [2-kg]) pork loins, trimmed and sliced
2 cups (475 ml) Smoke on Wheels Pork Marinade or favorite marinade
8 tbsp (120 g) pork or rib rub of choice
Place the pork loins into a resealable plastic bag. Dump the marinade into the bag and marinate in the refrigerator for 2 to 3 hours.
Remove the pork loins from the bag and pat them dry using paper towels. Sprinkle all sides with the rub, and let rest for 10 minutes. Preheat the grill to 250°F (121°C).
Place the pork loins on the grill and cook using indirect heat for 30 to 35 minutes. Using a meat thermometer, check the temperature of the pork and continue to cook to an internal temperature of 140°F (60°F), about 10 minutes. Remove the pork from the grill and let it rest 10 to 15 minutes.
Cut the pork loins into ½-inch (1.3-cm) slices and serve.
