This juicy dish features beef short ribs slow-smoked in a tasty broth, grilled to perfection and mixed with a tangy and sweet sauce.

8 lb (3.6 kg) beef short ribs
Famous Dave’s Steak Seasoning or your favorite seasoning blend, to taste
½ tsp coarse ground black pepper
1 large onion, quartered and separated
1 (10-oz [296-ml]) can beef consommé
2 cups (473 ml) Famous Dave’s Barbecue Sauce or your favorite BBQ sauce
2 tbsp (31 g) sweet pickle relish
Preheat your smoker to 300°F (149°C), indirect heat.
Sprinkle the ribs generously on all sides with the steak seasoning and pepper. Place the ribs in a heavy roasting pan. Top with the onion. Pour the consommé around the ribs, being careful not to knock the seasoning off the ribs.
Place the ribs on the preheated smoker, covered, for 2½ hours. Remove the pan from the smoker. Place the ribs on a platter. Skim the fat from the juices in the pan. Remove the beef from the bones, discarding the bones. Place the beef back in the pan containing the juices.
In a bowl, combine the barbecue sauce and pickle relish and pour over the beef. Cover and bake for 45 minutes. Remove the cover and bake for 15 minutes longer.
