SLOW-GRILLED CHICKEN

Combining Dizzy Pig seasoning, a small controlled fire and a little patience just might create the best chicken you’ve ever tasted. For any doubters, we dare you to try!

YIELD: 4 SERVINGS  •  COOK TIME: 1½ HOURS

4–5 lb (1.8–2.3 kg) fresh chicken pieces: wings, drumsticks, thighs

1 cup (80 g) Dizzy Pig Dizzy Dust (though all Dizzy Pig flavors are good on chicken) or favorite seasoning blend

Start your grill. The preference for this recipe is cooking over charcoal. If you have a gas grill, you want the fire as low as you can get it. A small fire is best, so don’t use too much charcoal. Stabilize the temperature at 275°F (135°C) and wait for clean smoke.

Sprinkle a fairly generous layer of Dizzy Dust (or your rub of choice) on the chicken. Let it sit until the rub adheres, and then coat the other side. Place the chicken, skin-side up, on a raised grate. For the best results, chicken should be at least 12 inches (30 cm) above the charcoal or fire. If you are using a gas grill, consider cooking on the warming shelf above the cooking grate. Keep the lid closed and maintain the heat at 275 to 300°F (135 to 149°C). Rotate the grate or rearrange the chicken pieces every 15 minutes for even browning.

After 45 to 60 minutes (a bit less for wings), a nice, brown crust should have formed on the bottom of the chicken. If the chicken is getting really dark or looks burnt after 20 to 30 minutes, then you are cooking too hot. You should reduce the cooking temperature by either turning down your gas grill or closing the vents partway on your charcoal grill. Alternatively, on some grills, you can try to raise the cooking grate further away from the fire.

Once the chicken is golden, flip the chicken skin-side down. Continue to cook the chicken for 30 to 45 minutes. Remember to rotate the cooking grate or rearrange the chicken pieces every 15 minutes for even browning. The chicken is done when the skin is browned and the meat reaches an internal temperature of 185 to 195°F (85 to 91°C).

Remove it from the grill and let it rest for 5 to 10 minutes. Then enjoy!
