Hailing from Vermont means maple, and Sweet Breathe BBQ team does it well on these sweet and spicy maple-glazed wings.

12 chicken wings, tips removed
½ cup (64 g) your favorite BBQ rub
Maple or fruitwood chips
½ cup (115 g) unsalted butter
4 cloves garlic, minced
1 cup (236 ml) pure maple syrup
4 tsp (20 g) chipotles in adobo, puréed
½ tsp salt
Remove the wings from their packaging, and rinse and pat dry. Season the wings with your favorite BBQ rub, and let the rub set for about 10 minutes.
Prepare a two-zone medium fire at 350 to 450°F (177 to 232°C). Place a handful of maple or fruitwood chips on the fire. Place the wings on the cool zone of the grill. Cook the wings with the lid on, using indirect heat for 30 minutes.
While the wings are grilling, prepare the sauce. In a small saucepan over medium heat, melt the butter. Add the garlic and sauté until fragrant, about a minute. Add the maple syrup, chipotle purée and salt. Bring it to a slight boil and reduce the heat to low. Reduce the liquid until the sauce thickens enough to coat a spoon, about 5 minutes.
Move your wings to the hot zone of the grill. Cook the wings using direct heat for 6 minutes a side. Remove the wings, coat with sauce and return to the cool zone of the grill for 5 to 10 minutes to set the sauce. Using a meat thermometer, confirm the wings reached an internal temperature of at least 165°F (74°C).
