GREEK BURGER (AKA KOFTA BURGER)

Chopped herbs, grilled onion and fresh tzatziki sauce provide a rich flavor to these lamb burgers. Think outside the bun and grill a lamb burger. If you’ve never tried one before, we think you’re in for a real treat!

YIELD: 1 SERVING  •  COOK TIME: 19 MINUTES

LAMB BURGER

½ lb (227 g) ground lamb (may substitute ground beef, turkey or pork)

½ tsp fresh parsley

½ tsp minced garlic

1 tbsp (9 g) minced onion

Pinch of salt

Pinch of black pepper

⅛ tsp garlic powder

TZATZIKI SAUCE

1 cup (200 g) plain Greek yogurt

½ cucumber, peeled and finely chopped

2 cloves garlic, minced

2 tbsp (8 g) chopped parsley

Juice of ¼ lemon

Pinch of salt

Pinch of pepper

1 tbsp (5 g) finely minced red bell pepper

Vegetable oil, for the grate

2 thin slices red onion

1 bun, pita or naan bread

2 oz (55 g) crumbled feta cheese

To make the burger, mix the ground lamb with parsley, garlic and minced onion. Season with salt, black pepper and garlic powder

To make the sauce, add all of the ingredients in a bowl and stir until thoroughly combined. Refrigerate until ready to serve.

Prepare your grill for direct cooking at medium-high heat (400 to 500°F [204 to 260°C]). Oil the grate and place the lamb patty on the hot grill. Cook for about 6 minutes, flip and continue cooking for another 8 to 10 minutes, or to an internal temperature of 160°F (71°C). Remove the burger from the heat, cover and let it rest.

Grill the thinly sliced red onions and toast the bun/bread for 2 to 3 minutes. Top the onion slices with crumbled feta cheese while still on the grill.

Remove the onion and cheese from the grill. Add to the burger and top with tzatziki sauce. Then serve on the grilled bun or bread.
