BACON-WRAPPED PINEAPPLE TREATS

These bacon-wrapped pineapple treats are a great dessert any time of the year. If you like heat, when you wrap the pineapple chunks, add grilled jalapeños or serrano chile strips between the fruit and the bacon!

YIELD: 30–35 SERVINGS  •  COOK TIME: 10 MINUTES

1 whole pineapple (3–4 lb [1–2 kg])

2 tbsp (30 g) Oakridge BBQ Dominator Sweet Rib Rub, divided

1 (1-lb [455-g]) package low-sodium bacon, thick sliced

¾ cup (177 ml) Smokey Kansas City Spicy BBQ Sauce from Burnt Finger BBQ

2 tbsp (30 ml) honey

Core the pineapple and cut it into 1½-inch (4-cm) chunks. Dust the pineapple chunks with half of the rub.

Cut the bacon in half. Wrap a half-piece of bacon around each pineapple chunk, using a toothpick to hold the bacon in place. Dust the outside of the bacon-wrapped pineapple chunks with the remaining rub. Let the rub sweat a little while the pineapple and bacon get to room temperature.

Configure your grill for direct cooking over medium-high heat (400 to 500°F [204 to 260°C]). Place the bacon-wrapped pineapple chunks on the grill, and let them cook for about 5 minutes. Flip them and cook for an additional 5 minutes.

Mix the spicy barbecue sauce with the honey to make a sweet and spicy glaze.

Brush the glaze onto the bacon-wrapped pineapple chunks at the end of the grilling process. Apply the glaze several times, but be careful to not let it burn, cooking for another minute or so.
