GRILLED STUFFED SHRIMP MUSHROOMS

Mushrooms, grilled to perfection and stuffed with shrimp—that’ll make your taste buds jump!

The mixture of pepper and earthy seasonings shines through after you incorporate it into the cheese filling. Sprinkle it onto the shrimp prior to grilling and watch what happens. YIELD: 12 MUSHROOMS  •  COOK TIME: 15 MINUTES

12 large mushrooms

8 oz (227 g) pepper Jack cheese, grated

4 oz (113 g) cream cheese, softened

Weber Carne Asada Seasoning or favorite steak seasoning

4 wooden skewers, soaked in water for 30 minutes

12 medium shrimp, peeled and deveined

1 tbsp (15 ml) cooking oil

2–3 tbsp (6–9 g) chives, for garnish

Remove the mushroom stems and clean the mushrooms. In a mixing bowl, combine the pepper Jack and cream cheese. Season the cheese to your liking with the Weber Carne Asada Seasoning or your favorite steak seasoning. Stuff the mushrooms with the mixture, and then set them aside.

Skewer 3 shrimp per wooden skewer and brush with oil. Apply a light coating of Carne Asada Seasoning.

Grill the mushrooms at medium to low heat on a gas grill, or 325°F (163°C) indirect heat over charcoal, for about 8 to 10 minutes.

Grill the shrimp over direct, medium heat for 2 to 3 minutes. Flip the shrimp and cook for an additional 2 to 3 minutes. Remove the shrimp from the skewers. Place one shrimp on each mushroom and garnish with chives to serve!
