WHITE LIGHTNING ROASTED FINGERLING POTATOES

Whether cooking for a crowd or just a few people, carefully choose your quantities for these flavorful potatoes and be prepared for NO leftovers. Quick and convenient, this is the simplest—and tastiest—side dish you will ever make!

YIELD: 4 SERVINGS  •  COOK TIME: 30 MINUTES

1 lb (454 g) fingerling potatoes

1 tbsp (15 ml) olive oil

1 large onion, chopped

Granulated garlic, to taste

Ground black pepper, to taste

Boar’s Night Out White Lightning Rub or your favorite rub

Dry ranch dressing mix or cheese, optional

Preheat your grill to 350 to 400°F (177 to 204°C). Heat a cast-iron skillet on the grill for 15 minutes.

Rinse and dry the potatoes.

Place the potatoes in a medium bowl with the olive oil and chopped onion. Sprinkle generously with granulated garlic, black pepper and Boar’s Night Out White Lightning Rub. Toss the potatoes to coat with the ingredients.

Arrange the potatoes in a single layer in the preheated cast-iron skillet. Roast until they are golden on the outside and tender when pierced with a sharp knife, 25 to 30 minutes, or to your desired tenderness.

Remove from the grill, and serve hot with some additional rub on the side. You can also sprinkle dry ranch dressing mix for added flavor, or add cheese to the cooked potatoes until melted.
