Swedish baked pudding is a delicious, chocolaty pudding that is wonderful served warm with a spoonful of whipped cream or a high-quality vanilla bean ice cream. This wonderful fudgy cake, similar to brownies, will make children and adults happy!

PUDDING
1 cup (125 g) all-purpose flour
¼ tsp salt
¾ cup (144 g) sugar
2 tsp (7 g) baking powder
½ cup (60 g) pecans, chopped
2 tbsp (29 g) butter, melted
1 oz (28 g) square baking chocolate, melted
½ cup (120 ml) milk
1 tsp vanilla extract
TOPPING
½ cup (96 g) granulated sugar
½ cup (110 g) brown sugar, packed
4 rounded tbsp (28 g) cocoa powder, unsweetened
Whipped cream or high-quality vanilla bean ice cream, for serving
Prepare your cooker for 325°F (163°C), indirect heat.
To make the pudding, combine the flour, salt, sugar, baking powder and pecans in a bowl. In a separate bowl, melt the butter and chocolate together in a microwave or a double boiler and add the milk and vanilla. Add the liquid ingredients to the dry ingredients and mix to incorporate the batter. Place the batter into a greased or buttered 9 x 9-inch (23 x 23-cm) baking dish.
To make the topping, mix the ingredients in a small bowl. Using a sifter, sprinkle the topping over the batter in the pan. Pour 1 cup (236 ml) of water into a pan that is large enough to hold the pan containing the cake. Bake for 40 minutes or until the top of the cake is dry.
Serve with whipped cream or vanilla bean ice cream.
