CAROLINA MUSTARD BBQ SAUCE

Mustard sauces are a great change from your everyday barbecue sauce. Diva Q’s tangy mustard and vinegar sauce, with a sweet background, is fantastic served on pulled pork sandwiches, ribs, ham or pulled chicken.

YIELD: MAKES 3 CUPS (710 ML)  •  COOK TIME: 15 MINUTES

½ cup (125 g) yellow mustard

½ cup (120 ml) apple cider vinegar

½ cup (110 g) light brown sugar

¼ cup (50 g) finely minced onion

¼ cup (60 ml) clover honey

1 tbsp (15 ml) Worcestershire sauce

1 tsp finely minced garlic

1 tsp hot sauce

½ tsp kosher salt

½ tsp chipotle powder

Mix all the ingredients in a medium pot. Bring to a boil, and then simmer for 15 minutes. Serve on pulled pork, ribs, ham or pulled chicken.
