KANSAS CITY GLAZE

WILBUR’S REVENGE

This Kansas City–style sauce is sweet and smoky with a little bite. Feel free to increase or decrease the amount of cayenne to your taste preference.

YIELD: MAKES 4 CUPS (946 ML)  •  COOK TIME: 20 MINUTES

2 cups (491 g) ketchup

½ cup (120 ml) clover honey

½ cup (120 ml) agave

½ cup (120 ml) water

⅓ cup (79 ml) apple cider vinegar

⅓ cup (73 g) brown sugar

2 tbsp (31 g) yellow mustard

1 tbsp (7 g) onion powder

1 tbsp (10 g) garlic powder

½ tsp cayenne

Combine all the ingredients in a saucepan over low heat. Stir occasionally. Simmer for 20 minutes. The sauce should be thin but not watery. Allow to cool. Store in an airtight container and refrigerate. The sauce can be used immediately but is best if you allow it to cure for 24 hours.
