Mango Quinoa Salad

Ingredients:

1 Tbsp. lemon juice

¼ tsp. grated lemon zest

1 ½ Tbsp. chopped chives

1 c. corn

1 peeled and chopped mango

1 c. water

½ c. rinsed quinoa

Directions:

  1. Bring out a pan and place it over a medium heat. Add in the water and quinoa and bring to a light boil.
  2. Lower the heat and let the quinoa simmer for a few minutes or until the water is all gone. Take the mixture off the heat and let it set for another five minutes. Fluff up the quinoa using a fork and then move over to a bowl.
  3. Add in the rest of the ingredients before tossing around and serving.
