Maple Cinnamon Oatmeal

SERVES 4

Oatmeal is a classic breakfast favorite. Add a little maple syrup and cinnamon for a hot breakfast that will keep you feeling satisfied all morning long.

1 CUP ROLLED OATS

2 CUPS WATER

1 TEASPOON VANILLA EXTRACT

1 CUP UNSWEETENED APPLESAUCE

1 TABLESPOON PURE MAPLE SYRUP

1 TEASPOON GROUND CINNAMON

1. Place the rolled oats in a blender or food processor and pulse until the oats are finely ground.

2. In a small saucepan, combine the water and vanilla extract over medium-high heat and then whisk in the ground oats.

3. Bring the mixture to a boil and then reduce the heat and simmer it for about 3 minutes.

4. Stir in the applesauce, maple syrup, and ground cinnamon.

5. Simmer the mixture for about 1 minute longer and then remove from heat.

6. Let sit for 2 or 3 minutes before serving hot.
