SERVES 4 TO 6
These overnight oats are the perfect breakfast for busy families. Simply combine the ingredients before you go to bed and it will be ready to serve when you wake up in the morning.
2 CUPS ROLLED OATS
2 CUPS UNSWEETENED ALMOND MILK
¼ CUP PURE MAPLE SYRUP
2 SMALL BANANAS, PEELED AND SLICED
1¼ CUPS FRESH BLUEBERRIES
½ CUP CHOPPED PECANS
2 TABLESPOONS FLAXSEED MEAL
1 TEASPOON GROUND CINNAMON
1 TEASPOON ALMOND EXTRACT
PINCH OF SALT
1. Combine all of the ingredients in a large mixing bowl and stir well.
2. Spoon the mixture into a casserole dish and then cover with plastic and refrigerate overnight.
3. Spoon into bowls in the morning and serve cold, topped with granola if desired.
