MAKES ABOUT 1 CUP
This sweet dressing is the perfect way to top off a salad made with crisp greens and fresh fruit. A hint of balsamic vinegar and lemon juice set off the sweet flavor of the pear nectar and the fruit itself.
½ RIPE PEAR, PEELED, CORED, AND CHOPPED
⅓ CUP EXTRA-VIRGIN OLIVE OIL
3 TABLESPOONS PEAR NECTAR
1 TABLESPOON BALSAMIC VINEGAR
1 TABLESPOON FRESH LEMON JUICE
PINCH OF SALT
PINCH OF FRESHLY GROUND BLACK PEPPER
1 TABLESPOON POPPY SEEDS
1. Combine all of the ingredients in a blender. Blend until smooth and combined.
2. Chill until ready to use.
