MAKES ABOUT 1 ½ CUPS
This horseradish sauce is an excellent topping for any dish. Not only does it have the sweet flavor of fresh cranberries, but the horseradish gives it a little kick as well.
10 OUNCES FRESH CRANBERRIES
⅔ CUP WATER
½ CUP CANE SUGAR
⅓ CUP ORANGE JUICE
2 TABLESPOONS FRESH GRATED HORSERADISH
⅛ TEASPOON GROUND GINGER
1. In a small saucepan, stir together the cranberries, water, sugar, orange juice, and horseradish.
2. Bring the mixture to a boil and then reduce the heat to medium-low or low.
3. Simmer the mixture, covered, for about 10 minutes.
4. Remove the cover and cook for another 10 minutes, stirring occasionally.
5. Remove from the heat and stir in the ground ginger.
6. Allow the sauce to cool before serving.
