MAKES ABOUT 1½ CUPS
This sauce is just spicy enough to make your taste buds tingle. Serve it with enchiladas, or, if you are feeling adventurous, spread some on your favorite sandwich.
1 POUND TOMATILLOS, HUSKED AND CHOPPED
1 CUP FRESH CILANTRO LEAVES
1 JALAPEÑO PEPPER, CHOPPED
½ RED ONION, CHOPPED
4 TEASPOONS FRESH LIME JUICE
1 TEASPOON MINCED GARLIC
1 TEASPOON OLIVE OIL
½ TEASPOON SALT
1. Combine all of the ingredients in a blender. Pulse the mixture several times and then blend until smooth and combined.
2. Serve the sauce with your favorite Mexican-style dish.
