Satay is a traditional Indonesian dish consisting of skewered grilled meat served with a peanut-based sauce. Replace the meat with skewered vegetables grilled to perfection and serve them with this creamy sauce.
1 CUP LIGHT COCONUT MILK
¼ CUP SMOOTH PEANUT BUTTER
1 TEASPOON RED CURRY PASTE
PINCH OF SALT
1. In a medium bowl, whisk all of the ingredients together until smooth.
2. Spoon the mixture into a saucepan and heat over medium-low heat until warm.
3. Serve as a dipping sauce or pour over steamed vegetables.
