Tomato Cucumber Summer Salad

SERVES 6

This summer salad combines the crispness of fresh cucumber with the juiciness of ripe tomatoes. Tossed in a lightly sweetened dressing, this salad is sure to become a family favorite.

4 RIPE TOMATOES, ROUGHLY CHOPPED

1 VIDALIA ONION, SLICED THIN

1 SEEDLESS CUCUMBER, HALVED AND SLICED

2 TABLESPOONS RICE WINE VINEGAR

1 TABLESPOON RED WINE VINEGAR

1 TABLESPOON EXTRA-VIRGIN OLIVE OIL

1 TEASPOON CANE SUGAR

½ TEASPOON SEA SALT

¼ TEASPOON FRESHLY GROUND BLACK PEPPER

¼ CUP CHOPPED FRESH PARSLEY LEAVES

1. In a large bowl, combine the tomatoes, onion, and cucumber.

2. In a small bowl, whisk together the rice wine vinegar, red wine vinegar, olive oil, sugar, salt, and pepper.

3. Drizzle the salad with the vinegar-olive oil mixture and toss to combine.

4. Let the salad stand at room temperature for 30 minutes and then toss with the chopped parsley.
