Arugula, Red Cabbage, and Radish Salad

SERVES 4

Radishes are known for their anti-cancer properties as well as their high vitamin C content. Combined with fresh arugula and red cabbage, this salad has a bold and unique flavor.

2 CUPS THINLY SLICED RADISHES

¼ CUP CHOPPED BASIL LEAVES

4 CUPS FRESH ARUGULA

2 CUPS THINLY SLICED RED CABBAGE

¼ CUP FRESH LEMON JUICE

3 TABLESPOON EXTRA-VIRGIN OLIVE OIL

1 TABLESPOON WHITE WINE VINEGAR

PINCH OF SEA SALT

1. In a large bowl, combine the radishes and basil leaves. Stir well.

2. Add the arugula and red cabbage and toss well.

3. In a small bowl, whisk together the lemon juice, olive oil, vinegar, and salt.

4. Add the dressing to the salad, toss well to coat the salad, and serve immediately.
