Broccoli Almond Salad

This broccoli almond salad is perfect for a summer picnic or just as a quick, refreshing meal. Made with fresh vegetables and tossed in a lightly sweetened dressing, this salad is sure to please.

6 CUPS CHOPPED BROCCOLI FLORETS

1 LARGE STALK CELERY, DICED

1 PEELED CARROT, DICED

⅓ CUP TAHINI

3 TABLESPOONS PURE MAPLE SYRUP

1 TABLESPOON EXTRA-VIRGIN OLIVE OIL

1 TABLESPOON FRESH LEMON JUICE

¼ CUP THINLY SLICED GREEN ONIONS

½ CUP THINLY SLICED ALMONDS

1. Combine the broccoli, celery, and carrots in a bowl. Stir well.

2. Place the tahini, maple syrup, olive oil, and lemon juice in a bowl and whisk until smooth and combined.

3. Pour the dressing over the salad and toss to coat.

4. Toss with the green onions and sliced almonds just before serving.
