Mandarin Almond Spinach Salad

Baby spinach is loaded with vitamins, and it is also known for its high levels of calcium and iron. You may also be surprised to find that spinach is a good source of vegetarian protein; combined with almonds, this salad packs a protein-filled punch.

4 CUPS FRESH BABY SPINACH

1 SMALL CAN MANDARIN ORANGES, DRAINED

¼ SMALL RED ONION, SLICED THIN

¼ CUP SLICED ALMONDS

1. Combine the spinach, oranges, and red onion in a salad bowl. Toss to combine.

2. Divide between two bowls, and top each salad with sliced almonds and your favorite dressing just before serving.

Although you don’t need to avoid them completely, be wary of canned and preserved fruits and vegetables. Even though they may be vegan, they might not be as healthy as you think. Processed and canned produce are often high in sodium, so it is better to opt for fresh or all natural, frozen veggies. If you do buy canned products, rinse and strain them under cool water before using them to reduce the level of sodium.
