Looking for something with a little bit of Mexican flair? This black bean, corn, and cilantro salad is the perfect combination of high-fiber foods, flavored with the refreshing taste of cilantro.
2 (15-OUNCE) CANS BLACK BEANS, RINSED AND DRAINED
2½ CUPS THAWED FROZEN CORN
1 MEDIUM RIPE TOMATO, DICED
½ SMALL RED ONION, SLICED THIN
½ CUP FRESH CHOPPED CILANTRO LEAVES
¼ CUP FRESH LEMON JUICE
1 TABLESPOON FRESH LIME JUICE
2 TEASPOONS PURE MAPLE SYRUP
½ TEASPOON SEA SALT
¼ TEASPOON FRESHLY GROUND BLACK PEPPER
1. In a large serving bowl, toss together the beans, corn, tomato, red onion, and cilantro.
2. In a small bowl, whisk together the remaining ingredients.
3. Drizzle the dressing over the salad and toss to coat. Serve immediately.
