Roasted Garlic Hummus

MAKES ABOUT 1½ CUPS

Roasted garlic hummus is the perfect party snack. Full of flavor, this hummus is the ideal dip for chips or fresh vegetable sticks.

2 CUPS DRIED CHICKPEAS

½ CUP RAW CASHEWS

¼ CUP EXTRA-VIRGIN OLIVE OIL

2 TABLESPOONS FRESH LEMON JUICE

2 TABLESPOONS WATER

2 TABLESPOONS ROASTED GARLIC

1 TEASPOON SALT

1. Place the chickpeas in a bowl and cover with water. Soak the chickpeas overnight, replacing the water once.

2. Drain the chickpeas and place them in a food processor with the remaining ingredients.

3. Blend the mixture until smooth and combined.

4. Transfer to a bowl and chill if desired before serving.
