MAKES ABOUT 1½ CUPS
A unique twist on traditional hummus, this white bean hummus makes a great appetizer. Serve it with chips or fresh veggies for dipping.
2 CUPS DRIED CANNELLINI BEANS
½ CUP RAW CASHEWS
¼ CUP EXTRA-VIRGIN OLIVE OIL
2 TABLESPOONS WATER
2 TABLESPOONS FRESH LEMON JUICE
1 CLOVE GARLIC, PEELED
1 TEASPOON SALT
1. Place the beans in a bowl and cover with water.
2. Soak the beans overnight, replacing the water once.
3. Drain the beans and place them in a food processor with the remaining ingredients.
4. Blend the mixture until smooth and combined.
5. Chill if desired before serving.
