Avocado is an excellent source of heart-healthy monounsaturated fats. In this recipe, however, the health benefits of avocado play second fiddle to its fresh flavor and creamy texture.
3 RIPE AVOCADOS, PITTED, PEELED, AND CHOPPED
2 CUPS VEGETABLE BROTH
½ CUP MINCED RED ONION
¼ CUP FRESH CHOPPED CILANTRO LEAVES, PLUS EXTRA FOR GARNISHING
2 TABLESPOONS FRESH LEMON JUICE
1 TEASPOON SALT
1 CUP UNSWEETENED COCONUT MILK
1. In a food processor, combine the avocado, vegetable broth, red onion, cilantro, lemon juice, and salt. Blend the mixture until smooth and then pour into a serving bowl.
2. Cover and chill for several hours, until cold throughout.
3. Whisk in the coconut milk just before serving and garnish with cilantro leaves.
