Quick and Easy Veggie Wrap

SERVES 1

This easy-to-make veggie wrap takes no more than a minute or two to throw together. It is the ideal on-the-go lunch and it is simple to eat at the office or even in the car.

1 LARGE VEGAN TORTILLA

1 TABLESPOON FRESH HUMMUS

3 OR 4 ROMAINE LETTUCE LEAVES

1 SMALL CARROT

1 GREEN ONION

¼ GREEN BELL PEPPER, HALVED AND SEEDED

¼ RED BELL PEPPER, HALVED AND SEEDED

1. Lay the tortilla flat on a plate and spread the hummus evenly over it.

2. Tear the lettuce leaves by hand and arrange them down center of the wrap.

3. Grate the carrot and chop the green onion and sprinkle both over the lettuce leaves.

4. Slice the peppers thin and add them to the wrap.

5. Fold up the bottom of the wrap to contain the ingredients and then roll it up and enjoy.
