Refried Bean Burritos

Refried bean burritos are an excellent option for a quick meal. You can use the Refried Beans recipe in Chapter 11, or use the canned variety.

8 YELLOW CORN TORTILLAS

2 CUPS REFRIED BEANS

1½ CUPS COOKED MEXICAN RICE

FRESH SALSA AND/OR GUACAMOLE

1. Wrap the tortillas in a paper towel, two at a time, and microwave on high heat for 5 to 8 seconds, until warmed.

2. Spoon about ¼ cup refried beans down the center of each tortilla.

3. Top the beans with about 2 tablespoons of Mexican rice.

4. Roll the tortillas up around the filling and serve with salsa and/or guacamole.
