SERVES 6 TO 8
This pasta salad is full of Greek style, utilizing the flavors of olive oil, red wine vinegar, black olives, and even fresh basil.
1 (12-TO 16-OUNCE) BOX ROTINI PASTA
¼ CUP DICED RED ONION
¼ CUP DICED AND SEEDED GREEN PEPPER
¼ CUP FRESH CHOPPED BASIL LEAVES
2 TABLESPOONS EXTRA-VIRGIN OLIVE OIL
1 TABLESPOON RED WINE VINEGAR
¼ CUP SLICED BLACK OLIVES
1 TEASPOON DRIED OREGANO
PINCH OF SALT
PINCH OF FRESHLY GROUND BLACK PEPPER
1. Bring a large pot of water to boil and add the pasta.
2. Cook the pasta to al dente according to the directions and then drain.
3. Rinse the pasta in cool water, drain, and transfer it to a large bowl.
4. Stir in the red onion, green pepper, and basil leaves.
5. In another bowl, whisk together the remaining ingredients and add to the pasta.
6. Toss to coat, then chill until ready to serve.
