Blueberry Sorbet

SERVES 3 TO 4

Nothing is as refreshing as a cup of cold blueberry sorbet on a hot summer’s night. Made with fresh berries and lightly flavored with lemon juice, this sorbet will satisfy your sweet tooth.

½ CUP WATER

½ CUP SUPERFINE SUGAR

2 TABLESPOONS FRESH LEMON JUICE

5 CUPS BLUEBERRIES

1. In a medium saucepan, combine the water, sugar, and lemon juice over medium heat. Cook, stirring, until the sugar has dissolved.

2. Place the blueberries in a food processor and pour in the sugar mixture.

3. Blend and then strain the mixture through a mesh sieve and discard the solids.

4. Pour the blueberry syrup into a shallow dish and freeze until solid.

5. Just before serving, break the blueberry mixture into pieces and blend it in a food processor until smooth.

6. Serve immediately.
