This whipped chocolate mousse is just as decadent as any non-vegan dessert you have ever had. Serve it chilled topped with fresh berries or enjoy it completely on its own.
28 OUNCES SOFT REFRIGERATED TOFU
2 CUPS VEGAN CHOCOLATE OR CAROB CHIPS
1 CUP VEGAN CREAM CHEESE, ROOM TEMPERATURE
½ CUP VEGAN SOUR CREAM
1 CUP POWDERED SUGAR
1. Drain the tofu and chop it into cubes before transferring it to a food processor.
2. Blend the tofu on high speed until creamy, about 2 to 3 minutes.
3. Place the chocolate chips in a microwave-safe bowl and microwave on medium-high heat at 20-second intervals, stirring after each interval.
4. Stir the chocolate smooth when melted.
5. Drizzle it into the food processor while it is running on low speed and blend for 2 minutes until well combined.
6. Place the vegan cream cheese in the bowl of a stand mixer and beat until smooth.
7. Scrape down the sides and then add the sour cream and powdered sugar.
8. Beat the mixture on medium-high speed for about 1 minute and then beat into chocolate-tofu mixture.
9. Spoon the mousse into dessert cups.
10. Chill for 30 minutes before serving.
