Raw Coconut Fudge

The benefit of eating raw foods is that the natural enzymes in the foods are preserved. This raw coconut fudge is blended with walnuts and maple syrup to provide texture and fudge-like consistency without the need for cooking.

1¾ CUPS CHOPPED WALNUTS, DIVIDED

2 TABLESPOONS PURE MAPLE SYRUP

1 TABLESPOON WATER

2 TABLESPOONS COCONUT OIL

½ CUP UNSWEETENED SHREDDED COCONUT

2 TABLESPOONS UNSWEETENED COCOA POWDER

½ TEASPOON VANILLA EXTRACT

PINCH OF GROUND NUTMEG

1. Finely chop ¼ cup of the walnuts and set aside.

2. Place the remaining walnuts in a food processor and blend until it forms a coarse flour.

3. Transfer the flour to a bowl and stir in the remaining ingredients, including the ¼ cup of chopped walnuts.

4. Stir until the mixture is thick and well combined.

5. Pat the fudge into a dish to 1-inch thickness.

6. Cover and chill until firm (about 1 hour) and then cut into 1-inch squares.
